"I have spent a lifetime traveling the highlands of eastern Anatolia, the coastal villages of the Aegean, and the ancient kitchens of Central Asia — gathering recipes that are slowly disappearing — and this is my offering to you: every dish, every story, kept exactly as it was meant to be."
Every recipe carries a village, a season, and a grandmother's hand. I write them down so they are never lost.
mehmetkoc is dedicated to preserving the living culinary traditions of Anatolia — village by village, season by season — for every generation that follows.

"Every valley in Anatolia speaks a different dialect of flavor."
— mehmetkoc

Ankara, Türkiye
Mehmet Koç is an Ankara-based culinary writer and cultural researcher who has devoted more than two decades to travelling the rural heartlands of Anatolia — from the highlands of Kastamonu to the sun-baked plains of Gaziantep and the Black Sea valleys of Trabzon — in search of recipes that exist nowhere but in living memory.
Armed with a worn leather notebook and a cassette recorder, Mehmet has sat beside grandmothers in village kitchens, transcribed instructions whispered over simmering pots, and photographed the handwritten recipe cards tucked inside old Quran covers and flour tins. Each dish he documents carries the fingerprints of a community, a season, a history.
His mission has always been simple: share these recipes freely with the world, so that no flavour is ever lost to time. mehmetkoc is that promise, kept one recipe at a time.
"A recipe without its story is just a list of ingredients. The story is the soul."
Three ingredients that have shaped Anatolian cooking for millennia — their origins, their character, and the dishes they define.
Souring AgentRhus coriaria
Harvested from wild sumac trees that fringe the hillsides of Gaziantep and Şanlıurfa, this deep burgundy spice carries a bright, lemony tartness with an earthy undertone. Ground from dried drupes, it has been a cornerstone of Anatolian kitchens for centuries.

Warming SpiceCapsicum annuum — İsot
Known locally as isot, Urfa biber is sun-dried by day and sealed in cloth at night — a traditional sweating process that concentrates its deep, chocolatey heat. The result is a pepper flake unlike any other: smoky, oily, with a slow burn and notes of dried fruit and tobacco.

Aromatic ResinPistacia lentiscus var. chia
Weeping from scored bark in crystalline teardrops, mastic resin from the mastiha villages of Chios has perfumed Anatolian sweets and drinks since antiquity. Its piney, cedar-like aroma transforms confections with a subtle bitterness and a lingering, clean finish that is utterly distinctive.
